Steak Fingers Ingredients (Makes about 4 servings)
- 1½–2 pounds cube steak (or top round steak, pounded thin)
- Salt and black pepper
- 2 cups all-purpose flour (divided if desired)
- ¼ cup cornstarch (optional, for extra crispiness)
- 1 tsp each: garlic powder, onion powder, seasoned salt (or salt), black pepper
- Optional add-ins for the flour: ½–1 tsp paprika, cayenne, or a pinch of chili powder
- 2 large eggs
- ½–¾ cup buttermilk or milk
- 2–4 Tbsp hot sauce (optional, for the wet mix)
- Vegetable oil, peanut oil, or canola oil for frying (enough for ½–1 inch depth in a skillet)
How to Make the Steak Fingers
- Cut the steak into strips about ½–1 inch wide and 3–4 inches long. Season lightly with salt and pepper.
- Set up a dredging station: One shallow dish with the seasoned flour mixture (flour + cornstarch + spices). One dish with the beaten eggs mixed with milk/buttermilk and hot sauce (if using).
- Dredge each strip in flour, shake off excess, dip in the egg mixture, then coat again thoroughly in the flour mixture. Press gently so the coating adheres.
- Optional but helpful: Place breaded strips on a rack or parchment and refrigerate 15–30 minutes (or up to 1 hour) so the coating sets.
- Heat oil in a large skillet (cast iron works great) to 325–350°F / medium-high heat. Fry in batches without crowding, 2–4 minutes per side until golden brown and cooked through. Drain on a wire rack or paper towels and season immediately with a little salt.
- Keep warm in a low oven (around 200°F) if needed while you finish batches and make the gravy. Serve hot for maximum crispiness.
Mexican Brown Gravy (Tex-Mex Chili Gravy) – Makes about 2–3 cups
- ¼ cup bacon fat, lard, or vegetable oil
- ¼ cup all-purpose flour
- 2 Tbsp chili powder (use a good-quality Tex-Mex style)
- 2 tsp ground cumin
- 2 tsp garlic powder
- 1 tsp onion powder
- ½ tsp Mexican oregano (or regular oregano)
- ¼–½ tsp kosher salt (adjust based on your broth and fat; taste at the end)
- ½ tsp black pepper
- 2 cups beef broth (low-sodium preferred so you control salt)
How to Make the Mexican Brown Gravy
- Heat the fat/oil in a skillet or saucepan over medium-high heat. Whisk in the flour and cook, stirring constantly, 3–5 minutes until it turns light yellow to golden brown (the color of peanut butter) and smells toasty. This develops the flavor—don’t rush it.
- Add the chili powder, cumin, garlic powder, onion powder, oregano, salt, and pepper. Stir for about 30 seconds to bloom the spices.
- Gradually whisk in the beef broth until smooth and free of lumps. Bring to a simmer, then reduce heat to low and cook 8–10 minutes, stirring occasionally, until thickened to a pourable gravy consistency.
- Taste and adjust seasoning. Thin with a splash more broth or water if needed.
